Lazy Meal List

I am excited this week to create our Lazy Meal List!! We’ve had some fun creating other lists that will help us make the most of our summer days, finding time to do the things that fills our hearts, and creatively inviting God to meet us in those moments. 

Our assignment this week is a fun one because it gives you permission to sit down on Pinterest to get ideas! Who doesn’t love a few minutes of homework that includes Pinterest, right? 

This week we are going to make a list of easy, simple, summer meals. Not gourmet meals, the ones that are just 3-4 ingredients and require just a few minutes. 

Here’s some of my quick go-to’s: 

1. Summer Salads: 

My family loves when I prep a salad to just have in the frig for quick snacking or a side to dinner. A few family favorites are Pistachio Pudding, Strawberry Pretzel Salad, and Grape Salad! We also always have a big bowl of jello chilling in the frig. Quick and easy. 

2. Grilling Favs: 

I have a few quick marinades that work well with different types of proteins. I will marinate protein in a plastic bag in the frig each morning. Whether we use it that night, or tomorrow for lunch, it’s an easy go-to to having meals ready. Try dry rubs, salad dressings, and store bought marinades. The key is to keep it new — don’t repeat the same one in a week. Different marinades and flavors keep things fresh! 

3. InstaPot: 

If you don’t have one, get one! I do hard boiled eggs in 4 minutes (never a problem to peel), baked potatoes in 8 minutes, and chicken breast in 12! You can make macaroni and cheese (the homemade kind!) in 6 minutes. Therefore, one pot mess! No heat in the kitchen! So the key is this….keep it simple! Pinterest has a ton of ideas! 

4. Use fast food to fill the gaps: 

Here’s what I mean…buy chili from Wendy’s and put it over potatoes from the Instapot. Go to the local pizza place and buy their dough and make bread sticks at home. Purchase a rotisserie chicken from the grocery store and pull out your salad from #1. In other words, use a premade product from a store or restaurant to enhance the meal with quick sides. 

What’s the point of this you may ask? Well, if you’re like me, you don’t want to be in the hot kitchen all summer long. Preparing your Lazy Meal List now will help you to have a plan in place when bellies get hungry and you want to be out in the sun. Let’s plan well now so that we have those lazy moments this summer to connect, rest, and refuel!
